The grilled cheese sandwich is close to our hearts here at our creamery where we craft 100% grassfed artisan cheeses. Since April is National Grilled Cheese Month (yes, it has earned an entire month!), we celebrated with a Grand Grilled Cheese Contest featuring great grilled cheese recipes from our customers and followers. We are proud to announce that the votes are in! Here are the winning entries, with recipes for you to make at home… 

#1: Spring Grilled Cheese

“Here I have combined the rich flavor and texture of mushrooms with spring greens and sun-dried tomatoes on sourdough bread.  All the while, the subtle taste of the fontina cheese mixed with fresh thyme ties up all the flavors in a pleasant and refreshing way to make this grilled cheese one to remember!”
Ingredients
4 tablespoons olive oil
1/4 cup mushrooms of your choice, sliced
1/8 cup red onion, sliced thin
handful spring greens, fresh
5-6 sun-dried tomatoes
4 slices fontina cheese
fresh thyme
2 slices sourdough bread
Instructions
Heat 2 tablespoons of olive oil in pan.  Add mushrooms and onions, and cook over low heat for ~5 minutes until cooked through.  Remove mushrooms from heat and set aside.  Add additional 2 tablespoons of olive oil to pan and place bread in oil.  Let bread brown for ~2 minutes over low heat.  Flip bread and repeat until both sides are golden brown.  
Remove bread from pan.  Assemble sandwich with two slices of cheese on each slice of bread.  The mushrooms, onions, tomatoes and greens should be piled in between.  Add assembled sandwich to pan, cover and let rest over very low heat until cheese oozes out the sides.  Enjoy!

#2: Smoked Salmon & Havarti Grilled Cheese

Ingredients
Smoked salmon
Havarti cheese
Mustard-dill sauce (recipe below*)
Marinated cucumbers & onions (recipe below*)
Watercress
Light rye bread, buttered
Instructions
Combine ingredients on bread and cook on skillet until desired meltiness!
*Mustard-Dill Sauce:
Combine 1 tablespoon each of dijon mustard, mayo, sour cream and fresh chopped dill. 
*Marinated Cucumbers & Onions: 
⅓ seedless cucumber, thinly sliced
½ small onion, thinly sliced
⅔ cup white vinegar
⅔ cup water
½ cup sugar
1 teaspoon salt
1/2 lemon sliced into ¼-inch rounds
 
Combine water, vinegar, sugar and salt in a small saucepan and place over medium-high heat. Bring just to a boil and remove from heat. Allow to cool to room temperature. Put sliced cucumbers, onions and lemon slices in a small container and pour cooled marinade over them. Refrigerate at least 3 hours. Drain and remove lemon slices.

#3: Italian Grilled Cheese

Mozzarella (which she fondly calls “the blobby kind”)
Fresh basil
Tomatoes, sliced
Italian bread, buttered
Instructions
Use these ingredients + your favorite grilled cheese method. Presto, it’s that simple!
