This light, simple soup is lovely for hot Summer days. Packed with probiotics and antioxidants, it is nourishing and refreshing. Don’t forget the drizzle of balsamic vinegar for the perfect sweet-tart taste!

Chilled Strawberry Basil Soup

  • 2 cups strawberries, hulled and roughly chopped
  • 1 cup Traders Point Creamery low-fat vanilla yogurt
  • Juice of 1/2 of a lemon
  • 1/2 cup loosely-packed basil leaves
  • balsamic vinegar (optional)

Combine strawberries, yogurt, basil, and lemon juice in a blender until mixed but still thick. Pour into bowls and finish with a drizzle of balsamic vinegar.
